Marty’s first one was from a cart at 8:55 in the morning, opened in three strokes. The second one was a few minutes later. Hannah’s realisation came on a humid Kansas City afternoon: the thing we missed most did not exist here.

Picked young, trimmed, chilled at the dock, kept under 5°C across the Pacific and the prairie. It can go a little sour if you leave it a month. Drink it in two weeks.
